
Our History: A Name with Deep Roots
Before the modern-day Manatee River became a household name, the waterway just outside our front doors was known by another — Oyster River.
In 1837, nearly two centuries ago, explorer and geographer John Lee Williams published one of the earliest known maps of Florida. On it, the river that now flows past downtown Palmetto was clearly labeled “Oyster River” — a name reflecting the rich estuarine environment and the abundance of wild oysters that once thrived along its banks.
We chose the name Oyster River to honor this forgotten chapter of local history — and to celebrate the deep connection between this place, its people, and the natural beauty that surrounds it. Just as the river has shaped the life and culture of this region, it now inspires our approach to hospitality: rooted in tradition, alive with flavor, and always flowing with a sense of place.

With over 25 years of experience in the world’s most prestigious kitchens, Chef Anthony Castro brings a globally inspired, meticulously refined culinary vision to Oyster River at the Palmetto Marriott. From Asia’s vibrant street markets to Europe’s most elegant dining rooms, his journey is a story of passion, precision, and international flair.
Chef Castro began his career under the mentorship of Chef See at the Shangri-La Hotel in Southeast Asia, where he developed a deep appreciation for the region’s complex flavors and time-honored techniques. This early exposure sparked a lifelong pursuit of culinary excellence, blending tradition with innovation.
His talents soon took him aboard Star Cruise Line as Chef de Partie, where he traveled the globe and immersed himself in diverse culinary cultures across Asia, Europe, and the Americas. These formative years sharpened his adaptability and ignited his creative spirit.
Chef Castro later honed his craft at The Peninsula Hotel, working alongside Chef Jan Gundlach, mastering the intricacies of European cuisine. He then joined Culinary Olympic champion Chef Terry Greenhouse at the legendary Edinburgh Castle, followed by a prestigious appointment as Sous Chef at Liverpool’s iconic floating hotel.
In 1994, Chef Castro brought his talents to the United States, beginning in Miami and rising through the ranks at elite properties such as Trump Hotels, Four Seasons, JW Marriott, Ritz-Carlton, Renaissance Hotels, and the exclusive Ocean Reef Club. Each chapter has deepened his culinary perspective and commitment to delivering extraordinary dining experiences.
